Last winter I had an overabundance of lemons from the 4 trees we have in our garden. I took one full day to try and put them to good use and in an effort to not waste any part of them, decided to make limoncello for the first time. I love the stuff and think it's a most excellent gift to take when you're invited to dinner! It couldn't be easier. The hardest part was finding 95 proof vodka.
10 lemons, washed and dried
1 bottle 95 proof vodka
2 cups of sugar
Remove the peel from the lemons in long strips using a vegetable peeler, avoiding as much of the pith (the white layer) as possible. Place the peels in a non-reactive container you can close and pour the vodka over them, stirring just to make sure the peels are submerged. Leave this to macerate for 1 week in a cool place.
A week later mix the 2 cups sugar with 2 cups of water and heat on the stove until the sugar is completely dissolved. Allow it to cool completely. Meanwhile, strain the infused vodka through a cheesecloth into another container. Add the cooled sugar syrup to the vodka, stir, and chill well before serving.
