I ate a version of this at the excellent Orfali Brothers Bistro in Dubai recently. They had little dollops of it on a delicious eggplant dish and it really added a lovely background hum to the dish. When I saw Makdous Muhammara on the menu, I immediately knew how delicious it would be and had to try and create my own. It's perfect for dipping vegetables or crackers in, or spreading on a sandwich, or as an extra little finishing element in a roasted vegetable dish or maybe with smoked lamb chops?? 2 red peppers, roasted and cleaned
3 green onions
1 1/2 teaspoon ground cumin
1/4 cup pomegranate molasses
2 tablespoons lemon juice
pinch of salt
5 makdous
4 tablespoons fresh breadcrumbs
large pinch of chilli flakes
1/2 cup lightly toasted walnuts
Place everything in a food processor and blend until you have a smooth mixture. Make sure to stir a couple of times to make sure everything is well-incorporated.
