4 carrots
2 or 3 sprigs fresh cilantro
1 cup apple cider vinegar
1 cup water
1 dried red chilli
¼ cup sugar
1 tablespoons salt
½ teaspoon whole black peppercorns
1 teaspoon anise seeds
1 teaspoon coriander seeds
2 cloves garlic, smashed
Peel the carrots, then slice them lengthwise as thinly as possible (I use a vegetable peeler to do this). Place the sliced carrots in a jar along with the dill and cilantro.
In a pot, combine the vinegar, water, chilli, sugar, salt, peppercorns, coriander, and garlic. Heat, stirring to dissolve the sugar and salt. Remove from the heat, then pour over the sliced carrots, Cover and let sit at room temperature overnight.
