Pickled Shallots or Red Onions

Ingredients

Recipe serves:

4 shallots or 1 red onion, sliced into thin rounds

1/2 cup red wine vinegar

1/2 cup water

3 tablespoons sugar

3 tablespoons salt

Instructions

Dissolve the sugar in salt in the vinegar before adding the water and placing the solution in a jar. Submerge the shallot or red onion slices in the liquid. Allow to pickle for at least 2 hours before using. Will keep for a week (or more) in the fridge.
