Sausage Egg and Cheese Breakfast Biscuits

Remember how I said I'm a Midwestern girl at heart? Well, this recipe lays truth to that statement as I've sort of recreated a fast food breakfast sandwich in the best way possible. Originally, when I created these for Super Vega, I used a housemade chicken apple sausage as they really don't have chicken sausages of any sort in Lebanon. It's not hard to do, but I'm also not going to ask you to make your own - it's usually an unnecessary step. If you can find a chicken apple sausage in the casing all you need to do is split open the casing and form a little patty with the meat mixture. You could also do a pork sausage, duck....I just wouldn't use beef or lamb and I think they're a bit heavy and overwhelming for a morning morsel like this one. This recipe wasn't long on the menu at Super Vega I think because I had them making the biscuits, making the everything spice mixture, making the sausage and on and on. I can get a bit ambitious like that, but for those of us who can now find everything bagel seasoning in the store and a sausage on the supermarket shelf, this really isn't tricky at all. And who doesn't love a good biscuit recipe?

Ingredients

Recipe serves:

For the Everything Bagel Biscuits:

3 cups all-purpose flour

2 teaspoons baking powder

1/2 teaspoon salt

4 tablespoons unsalted butter, cold and cubed

4 ounces/ 8 tablespoons cream cheese, cold and cubed

1 cup buttermilk (plus a splash more for brushing the tops of the biscuits with)

Everything bagel seasoning mix for sprinkling on top of biscuits

For the Sandwich:

8 small chicken apple sausage patties, shaped to about the same diameter as your biscuits (see recipe headnote)

8 eggs, whisked

2 tablespoons butter

1/4 cup crumbled soft goat cheese

spinach leaves

salt and pepper

Instructions

First to make the biscuits, preheat your oven to 400F/200C degrees and line a baking sheet with parchment paper. Combine the dry ingredients in bowl and rub in the cold butter and cream cheese into them until it looks like sand. Add buttermilk and mix until just combined. Roll out to 1 inch thickness and cut out with a 3 inch round. Brush with remaining buttermilk in bowl and scatter liberally with everything mix. Bake until golden - about 12 minutes. Allow them to cool before cutting.

To assemble the sandwiches, first cook your chicken apple sausage patties in a frying pan with a touch of olive oil until they're cooked through and golden on the outside. Melt the butter in the same pan (give it a quick wipe with paper towels if you like) and scramble the eggs, seasoned with salt and pepper. Fold in the goat cheese and spinach leaves and cook until just slightly wilted. Separate the eggs in to 8 separate squares. Place the cooked sausage on the bottom half of each biscuit and top with a portion of the scrambled eggs.
