Sausage Pinwheels

Christmas Day breakfast is my favorite meal of that day.🌲 It comes after the giddy excitement of kids opening presents, discovering what Santa delivered, with the promise of a lazy day ahead. Can I suggest these delicious sausage pinwheels be added to your breakfast table? You can them prepare almost entirely in advance, just cut the rolls into slices and bake when you're ready to eat....and snack on them throughout the day! I like to use sujuk which is a strongly spiced beef or lamb sausage widely eaten from the Caucus Mountains to Turkey to the Balkans to the Levant. You could also substitute merguez or pork breakfast sausage to similar effect. 

Ingredients

Recipe serves:

2 cups all-purpose flour

3 teaspoons baking powder

½ teaspoon salt

2 tablespoons cold unsalted butter

½ cup milk

¼ cup unsalted butter, melted

500g sujuk sausage (or your choice of loose sausage)

Instructions

Preheat the oven to 400/200 degrees and line a baking sheet with parchment paper. In a large bowl mix together the flour, baking powder, salt and cut in the cold unsalted butter until it’s thoroughly incorporated. Now add the milk and melted butter and stir well. Place in the refrigerator for 30 minutes until firm. 

Divide the dough into 2 equal pieces (keeping the one your not using right away in the fridge). Roll the first piece out on a lightly floured surface until you have about a 10 x 7 inch rectangle. Spread the dough with half of the sausage. Now roll the long side up so you have a spiral similar to a roulade. Place the roll in the freezer until it’s hard enough to be easily cut. Now repeat with the second half of dough. Cut the semi-frozen logs into thin slices and place each on your prepared baking sheet. Bake for 15 minutes until golden brown. Best served hot.
