World's Best Popcorn

Popcorn, you ask?? Absolutely! It was maybe my most requested item when I catered events in Beirut and I was just told by a friend that this is the BEST POPCORN EVER (all caps were her's not mine)! A perfect nibble to have on hand if you're having guests over and so very special. Leave the aromatics in the bowl as they make for excellent conversation starters!​​​​​​​​

Ingredients

Recipe serves:

1/4 cup olive oil​​​​​​​​
2 fresh bay leaves​​​​​​​​
2 stems fresh rosemary
​​​​​​​​3 cloves garlic, smashed but in their skins
​​​​​​​​1 whole dry red chili​​​​​​​​
1 teaspoon salt (plus more to sprinkle)
​​​​​​​​1/2 teaspoon freshly ground black pepper
​​​​​​​​1 cup popcorn kernels​​​​​​​​

Instructions

Heat a heavy pot with a lid on the stove over high heat and add olive oil, salt, pepper, rosemary, bay leaves, chili, and garlic. Allow to cook, stirring frequently, so that all of the flavors get into your oil. Once the garlic is turning golden, add the popcorn kernels and stir well again, reducing the heat to medium. Place the lid on the pot and continue to shake periodically until you hear the popping begin. Shake and shake and shake some more until the popping almost comes to a complete stop. Carefully remove the lid and pour the popcorn into a bowl, sprinkling with a little more salt if you so desire. ​​​​​​​​​​​​​​​​Note: do not cover or it will go soggy!​​​​​​​​
